Ingredients

Ingredients:


• 1 Tomato Basil Soup Mix

• 1 cup (100 g) cauliflower

• Salt and pepper to taste


Optional flavor enhancers:

• Roasted garlic cloves

• Roasted colored peppers

• Fresh basil (add on top)

• Daily allowable 1 ounce milk or half-and-half

Preparation

Directions:


  1. Bring cauliflower to a full boil and boil until fork tender (5-7 min).

  2. Empty cauliflower into a colander to drain water and cool (15 min). Cauliflower should not be wet

  3. Blend cauliflower in a food processor until creamy and now you can add/blend any of the ingredients enhancers/seasonings.

  4. YUM! Creamy, mashed potato-like cauliflower. 1 ounce of milk can be blended in, if not too wet, 1 ounce per head of cauliflower.

  5. Prepare your Ideal Protein Tomato Basil Soup Mix with 6-8 ounces of water or optional chicken broth in a pot. Add 1/2 cup of the creamy cauliflower mixture.

  6. Add soup and creamy cauliflower mixture to a pot and stir while heating on medium heat until hot Do not boil (or mix well and microwave for 30-60 seconds on medium heat).

  7. Save leftover cauliflower to enhance various Ideal Protein soups or have as a vegetable serving.



Serving: 1 cup of cauliflower = 1/2 cup cooked and creamed cauliflower (100 g).


Preparation time and storage:

-Creamed cauliflower (30 min). Can be made in advance and consumed within 4-5 days.

-Tomato Basil Soup Mix (10 min). Can be made in advance and consumed within 4-5 days.

-Reheat in the microwave on medium or heat on a stove top until hot.
