Curried Cauliflower Soup with Shrimp

Ingredients

• 1 cup chicken broth

• 2 cups small cauliflower florets

• 1 teaspoon curry powder

• 1/s teaspoon salt

• Pinch cayenne pepper

• 4 ounces cooked peeled and deveined shrimp, chopped

• 1 tablespoon snipped chives

• 1 tablespoon microgreens, optional

Preparation

• Bring the broth to a boil in a medium saucepan.

• Add the cauliflower, curry powder, salt, and cayenne, then return to a boil.

• Reduce the heat, cover, and simmer until the cauliflower is tender, about 3 to 4 minutes.

• Transfer the soup to a blender. Place the lid on and set a folded towel over the top. Hold the lid gently and blend on low for 10 seconds.

• Stop, remove the lid to release pressure, then replace the lid and towel. Blend another 10 seconds, release pressure again, then blend on high until smooth.

• Pour the soup back into the saucepan and heat it to a gentle simmer.

• Serve with shrimp, chives, and microgreens if you want a little extra color and flavor.
