Ingredients
• 1 whole chicken (4-5 lbs)
• 2 tbsp olive oil
• 1 lemon (juice + zest)
• 2 cloves garlic, grated
• ¼ tsp turmeric
• 2 tbsp saffron water
• ¼ cup parsley, chopped
• ¼ cup cilantro, chopped
• Salt+ pepper
Stuffing:
• 1 lemon, halved
• Garlic cloves
• Fresh herbs
Preparation
• Mix the marinade and coat the chicken thoroughly.
• Stuff cavity with lemon, garlic, and herbs.
• Marinate for at least 2 hours or overnight.
• Preheat the BBQ to medium heat.
• Grill whole chicken, turning occasionally until cooked through.
• Rest before serving.
