Ingredients

  • 2 medium green, orange or yellow bell peppers (to represent pumpkins)

  • 1 cup lean ground turkey or chicken

  • 1/2 cup diced tomatoes (canned, no added sugar)

  • 1/2 cup chopped onion

  • 1 clove garlic, minced

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

  • Optional: a sprinkle of chili powder for heat


Preparation


  1. Preheat the Oven: Preheat your oven to 375°F (190°C).

  2. Prepare Peppers: Cut the tops off the bell peppers pumpkin style jagged edges and remove the seeds. Carve little triangles for eyes and nose. Carve a little spooky mouth. Set aside.

  3. Cook Filling: In a skillet over medium heat, sauté the onion and garlic until fragrant. Add the ground turkey or chicken and cook until browned. Stir in the diced tomatoes, Italian seasoning, salt, pepper, and chili powder if using. Cook for another 5 minutes.

  4. Stuff Peppers: Fill each bell pepper with the turkey mixture, packing it in tightly.

  5. Bake: Place the stuffed peppers in a baking dish with a little water at the bottom to create steam. Cover with foil and bake for 25-30 minutes, or until the peppers are tender.

  6. Serve: Let them cool slightly before serving. Enjoy your healthy, spooky treat!
