Ingredients
2 teaspoons olive oil
½ cup thinly sliced green onion
4 garlic cloves, minced
¾ teaspoon salt
¼ teaspoon black pepper
12 ounces ground lean turkey
1 ½ cups chopped tomato
2 tablespoons chopped fresh basil
2 cups packaged zucchini noodles, steamed
Preparation
Heat 1 tsp oil in a 10-inch skillet over medium-high. Sauté green onion and garlic for 2 minutes, then season with salt and pepper. Transfer half to a medium bowl and half to a small bowl. Wipe out the skillet.
Mix turkey with the green onion mixture in the medium bowl; form 10 meatballs.
Heat 1 tsp oil in the skillet over medium. Brown meatballs, turning once, about 6 minutes.
Add tomato, basil, and the reserved green onion mixture. Bring to a simmer, cover, and cook on medium-low until meatballs are done.
Serve over steamed zucchini noodles.
