1 packet IP pancake mix
1 packet IP vanilla drink mix
1 tsp cinnamon
IP maple syrup if desired
Combine pancake mix as per directions on packet.
Spray a microwave safe container (flat bottomed) with cooking spray and spread the pancake mix on the bottom. Let sit while you mix up the filling.
Mix the vanilla drink, cinnamon and 3 tbsp water or until desired texture. This should be a little thinner than frosting- a few more drops of water might be needed to get the right consistency.
Microwave the pancake for 1 minute. Flip onto a plate. Spread the cinnamon mixture on top and roll it up.
Cut into slices. (You could also do this sandwich form if you don't want to be bothered with rolling.)
