  • 1 packet Ideal Protein Cranberry Vanilla Oatmeal Mix

  • 1 packet Ideal Protein Golden Pancakes Mix

  • ½ tsp. ground pumpkin spice

  • ¼ tsp. baking powder

  • ¼ cup shredded zucchini

  • ¼ cup water

  • 2 Tbsp. Ideal Protein Maple Syrup

  • 1 Tbsp. olive oil

  • 1 tsp. apple cider vinegar


  1. Preheat oven to 350˚ F. Line a baking sheet with parchment paper; set aside.

  2. In a small mixing bowl, combine oatmeal mix, pancakes mix, pumpkin spice, and baking powder; set aside.

  3. Squeeze shredded zucchini between paper towels to absorb excess moisture; transfer zucchini to separate small mixing bowl. Add water, maple syrup, oil, and vinegar; stir well to combine.

  4. Add dry ingredients to zucchini mixture; stir to mix. Using a standard-size ice cream scoop, scoop batter onto parchment paper making 4 cookie cakes.

  5. Bake until a cake tester inserted in center of a cookie cake comes out clean, 6-8 minutes. Using a spatula, remove cookie cakes from baking sheet; cool completely on a cooling rack.
